Gluten-Free Creamy Scalloped Potatoes


One of my main goals for the new year, was to totally give up gluten. Fortunately it hasn't been to difficult to turn some of our favorite recipes gluten free. Like my scalloped potatoes. All I had to do was switch the flour out for corn starch, with a slight difference in the measurements. If it asks for 1 tablespoon of flour, you would half it and use 1 1/2 teaspoons of corn starch. Easy huh? This recipe is so creamy and comforting, you wont even be able to tell it's gluten free.

Gluten-Free Creamy Scalloped Potatoes

4 potatoes (sliced thin)
2 Tbs. dry minced onion
3 Tbs. corn starch
3 Tbs. butter
salt and pepper to taste
2 cups milk 

In a 9 inch baking dish that's been sprayed with cooking spray, place a layer of potato slices in the bottom of the dish. Sprinkle 1 Tbs minced onion over potatoes, then 1 1/2 Tbs cornstarch. Dot with 1 1/2 Tbs butter.


Place another layer of potatoes, onions, corn starch and butter. Pour milk into dish until it completely covers all of the ingredients. Salt and pepper to taste.
