{GF} Drop Biscuits
One of our families favorite treats on a lazy Sunday morning is biscuits and gravy. Me and my husband were both raised on that Southern treat, and neither one of us is willing to give it up. Even though I came up with a yummy GF gravy recently, I still needed to find a good alternative for our gluten laden biscuits. Coconut flour to the rescue. While these don't rise as well as my flour containing recipe, they still satisfy our desire for that old-fashioned Southern treat we enjoy so much.
*This recipe is a work in progress, I'm still experimenting with ways of getting a better rise out of them. I'll update if I have any success.
{GF} Drop Biscuits
Heaping, 1/3 cup Coconut Flour
5 TBSP Butter, softened but not melted
4 eggs
dash of salt
1/2 tsp baking powder
Preheat oven to 400 degrees
Put all ingredients into a medium sized bowl and mix well with a hand mixer.
Using a Tbs. place heaping spoonfuls of the batter on a greased pan.
Bake for 12-15 minutes until just starting to brown.
