Oh-My-Goodness Are these cookies good! Who would think adding zucchini to a cookie would make them so moist and yummy? These tasty gems came out soft and moist in the middle, almost like a cake, but had the slight crunch of a cookie on the outside. Delicious. Ok, now that I've bragged about them enough, go make some ASAP. You wont be disappointed.
Zucchini Cookies
Adapted from: Eat Cake For Dinner
1 c. butter, softened
1 1/2 c. white sugar
1/2 c. Sucanat or light brown sugar
2 eggs, beaten
3 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. salt
1 c. peeled zucchini, grated
1 c. chocolate chips
1/2 cup chopped pecans
Preheat oven to 350 degrees. Cream the butter and sugar. Add eggs, flour, baking soda, baking powder, cinnamon and salt; mix well. Stir in the zucchini (batter will look really dry at first, just keep mixing). Fold in chocolate chips and nuts. Drop by tablespoonfuls onto a greased cookie sheet. Bake 10-12 minutes or until golden brown on the edges, and lightly browned on top. Do not over bake.
