Egg and Veggie Scramble
I took one of favorite breakfast items, a veggie omelet, and turned it into a super easy and tasty scrambled egg dish. It's packed with protein and healthy carbohydrates, and fills you up as well. This dish is versatile to, since you can use whatever veggies you would like, or happen to have on hand. Mushrooms, green onion, broccoli, even some leftover, chopped baked potato. It can also be wrapped up in a tortilla which makes a delicious breakfast burrito.
Egg and Veggie Scramble
2 Eggs, whisked well
1/4 Green Pepper, chopped
1/4 of a small Onion, chopped
1 medium Tomato, chopped
Sea Salt and fresh ground Pepper to taste
Coconut Oil
Melt a tablespoon of coconut oil in a small pan over medium heat. Add green pepper and onion and cook for 1 minute, stirring several times. Add the tomato and cook for 1 minute more, stirring several more times. Add the eggs, sea salt and pepper, stirring and cooking till eggs are set. Serve as is, or with a warm tortilla.
