Baked Mac and Cheese


Forget the boxed mix, making your own mac and cheese from scratch is easier then you think, and so much tastier. The smooth and creamy results are worth it.

Baked Mac and Cheese

8 oz. macaroni, cooked
4 Tbs butter
3 Tbs flour
1/4 tsp salt
dash of pepper
3/4 cup evaporated milk, 1 1/4 cups water, mixed
1 package, (16 slices) american cheese
1 cup shredded colby/jack cheese

In a saucepan, melt butter over medium heat. Stir flour into the butter until smooth and bubbly. Stir in salt, and pepper. Gradually add milk mixture, stirring constantly. Continue to cook, stirring constantly, until slightly thickened. Add cheese and continue to cook and stir until melted and bubbling.
Pour cheese sauce over cooked macaroni and mix well. Pour into a buttered, 8x10 baking pan. Sprinkle colby/jack cheese over all and bake in a preheated 350 degree oven for 15 minutes, or until hot and bubbly.

I make a three cheese mac and cheese that my family loves, but it doesn't have either of these cheeses in it. I'm gonna give it a try. I think just about any cheese combination has to be good! I've also never used evaporated milk in mine. Thanks!

I think the evaporated milk makes it more creamy. Let me know how you like it. :)

YUM!! Nothing like homemade mac and cheese! I've used Paula Deen's recipe for years. This one looks delish too!
