Menu Plan Monday 4/11 ~ 4/17


This past week was crazy. I didn't get to make three of my dinners last week because of appointments and school activities, which meant take-out. *yuck* I found out something to. Since I've been cooking from scratch, without all those preservetives and additives, my body has become accustomed to it. When I eat restaurant food now, it makes me sick with several unpleasent side effects. That tells me right there that all that junk is bad for our bodies. Live and learn I guess, it just makes me more determined to cook every thing from scratch, plus get off my butt and do some freezer cooking so I wont be caught without a pre-cooked meal again! I'm making two new recipes this week, plus cooking up extra chicken and ground beef to keep in my freezer.

Menu Plan Monday


Breakfasts: Cold Cereal with Fruit, Fruit Smoothies, Breakfast Cookies, Granola Bars, or Mini Apple Pies.

Lunches: Leftovers or sandwiches

Dinners:

Monday~ Beefy enchilada bake, fresh salsa

Tuesday~ Hubby's favorite fried pork chops, asparagus, mac and cheese

Wednesday~ Baked french onion chicken, spanish rice

Thursday~ Breakfast night/Southern biscuits and sausage gravy, eggs

Friday~ Leftovers

Saturday~ Family Pizza Night

Sunday~ Homemade chicken and noodles, roasted potatoes, rolls

Your menu sounds great! I have those weeks too...the menu just falls apart.

I love freezer cooking and it really does help with those times when you don't have time :)

Mmm...now I'm hungry for mac and cheese. :-) That recipe sounds yummy.

That enchilada bake sounds yummy! I might have to try that one out. I really need to start freezer cooking myself. I hate it when we have to get take-out or worse eat frozen dinners! I think I might start incorporating a breakfast night in our weekly meal plan as well. I mean who doesn't love buttermilk biscuts and gravy!

Crystal~The enchilada bake is delicious! One word of warning though, make sure you like corn tortillas. Everyone in my family loved this except my hubby, who doesn't care for the corn version. Next time I'm going to try it with flour tortillas and see how it turns out.
