Momma's Easy Chili


This was my mom's recipe that I grew up eating and I continue to make it the same way today, with a few tweaks. I've tried other recipes before, but none of them ever matched up to my mom's. My family likes our chili mild, but you can certainly spice it up if you'd like. Add extra chili powder, cayenne pepper, chopped jalapeno peppers, whatever you like. I usually serve it with saltine crackers, but it's equally good with a warm slice of Buttermilk Cornbread. This is comfort food at it's best.

*To make this chili gluten free, which is what I do as of 2012, just omit the macaroni, or use gluten free pasta.

Momma's Easy Chili

2 lb. ground beef
1/2 cup onion, chopped
1/4 tsp sea salt
1/8 tsp pepper
2 cups of cooked kidney beans
2 - 15 oz cans Tomato Sauce
1/2 pound macaroni
1 Tbs chili powder
1 Tbs cumin
1 Tbs beef bullion granules 
sea salt and pepper to taste
6 cups Water

In a large stock pot brown ground beef with onion, 1/4 tsp salt and 1/8 tsp pepper. While beef is cooking, cook macaroni according to package directions, drain. Drain off any grease from beef and add beans, tomato sauce, cooked macaroni, chili powder, cumin, beef bullion granules, salt, pepper and water. Simmer one hour, stirring occasionally. This makes a large pot of chili. Serve with cornbread or saltine crackers.

This chili is even better the next day after the flavors have a chance to blend together!

Hi April,
I can remember eating a similar Chili when I was a young woman at my friends house, I always just loved it. Your Chili looks very good and would sure bring back those memories for me.
